The ByWard Market and An Easy Bean & Rice Dish

How cute are these pumpkins?

Mr. Smith and I took a trip Downtown to the ByWard Market for an afternoon date.
We enjoyed a cup of coffee at Bridgehead and walked the market stalls to see
what good stuff we could find.  Look at all that Maple Syrup! Yummy!

These street performers were pretty good and I loved their sign: Saving to buy an electric guitar!

I hope so!  You won’t be disappointed.  

Here’s an easy meal to whip up with some fresh tomatoes and spinach, that’s perfectly delicious and nutritious.  I love the combination of black beans, vegetables, rice and a bit of lemon & goat’s cheese
to top it all off.  Mmmmm….

What is everyone up to this weekend?

We sure are enjoying some beautiful weather here and a series of stunning sunsets – which I love to watch while sipping chocolate chai tea…it’s a winning combination 🙂

So far, our weekend has been awesome and tomorrow we’re hosting a get together with our closest friends. I’m really looking forward to that ’cause I know we’ll have tons of fun.

Gluten-Free Tomato & Spinach Black Bean Dish
Serves 2
 
1 can of black beans, drained & rinsed with ice cold water
2 cups of cherry tomatoes, halved 
2 cups of baby spinach
1 clove of garlic
1/2 tsp hot pepper flakes
salt & pepper
2 Tbsp Olive Oil
1/4 cup feta cheese
2 slices of lemon
 
1 cup of dry brown rice prepared (which makes enough for two servings)
 
In a skillet, pour olive oil and place one clove of garlic. Heat up on medium heat.
Add in spinach. Let cook for 5 minutes. Add in cherry tomatoes and spices. Mix
for about 5 minutes, then add in black beans. Cook for another 5-8 minutes.
Turn off element and remove the clove of garlic.
 
In a large casserole dish, combine the bean and vegetable mix with prepared rice.
Squirt with fresh lemon. Serve with crumbled feta and lemon slice.  Can be
enjoyed hot or cold. Yum!

  1. Our Farmer’s Market are kind of tiny and not to many choices, although there is a very big one over 30 minutes =) I am Cuban-American so black beans are a staple in our home. I am wondering though will this recipe work well if I do not cook the spinach I personally do not liked cooked spinach only raw…Thanks for another great recipe!

  2. oh Emily, that pumpkin pic is so cute!!! it’s funny the difference a day makes and now every one of my gf’s is chatting about Halloween costumes and trips to the nearest pumpkin patch. love this time of the season! you two are having a blast and definitely making up for lost time with these happy filled jaunts. great photos from your day!

    When I read Byward Market, I said, Hey, This lady’s from Ottawa! My husband grew up and I lived there 2 years before we moved to the US –
    How wonderful to see pictures of a familiar place and the pumpkins are too cute! The rice & beans recipe looks yummy, healthy and easy to prepare = winner 🙂
