Raspberry Coconut Smoothie

I love sipping on an afternoon treat that I know is fuelling my body with powerful nutrients.  This smoothie is dairy-free and easy on the tummy. Raspberries are known as one of the healthiest, nutritious foods around. They are packed with goodness and around here, we try to include them in our diet as much as possible. Raspberries are a high source of Vitamin C, Manganese, Fiber, and Vitamin K.  They are anti-inflammatory and have even been said to boost your metabolism. Most importantly, they taste so delicious!  I combined raspberries with a source of healthy fat, virgin coconut oil and coconut meat, to really make this one body-loving smoothie.

After a great workout or to keep you from an afternoon crash – mix this smoothie up in the blender and enjoy a palette pleasing drink that is sure to energize you. If you’re having a groggy Monday, this one’s for you and I promise it will turn things around 🙂

Nutritional Value of Raspberries

Red Raspberries are very high in dietary fiber. Up to 20 percent of their total weight is made up of fiber. They’re also a good source of vitamin C, B vitamins, folic acid, manganese, copper, magnesium and iron. One cup of red raspberries provides half the recommended daily allowance of vitamin C, 60 percent of the RDA for manganese and 33 percent of the RDA for fiber. Eating a cup of red raspberries will provide you with all this nutritional value and you will only be consuming 60 calories.

What are the health benefits of coconut oil?

Studies have shown that intake of coconut oil can help our bodies mount resistance to both viruses and bacteria that can cause illness. Even more, it also can help to fight off yeast, fungus and candida.

Coconut oil can also positively affect our hormones for thyroid and blood-sugar control. People who take coconut oil also tend to have improvements in how they handle blood sugar since coconut can help improve insulin use within the body. Coconut oil can boost thyroid function helping to increase metabolism, energy and endurance. It increases digestion and helps to absorb fat-soluble vitamins.

Raspberry Coconut Smoothie

Description

This smoothie is a combination of antioxidant rich raspberries, immunity building coconut and the superfood – chia seeds.


Ingredients

Scale
  • 1 frozen banana
  • 1 grated apple
  • 1 cup of frozen raspberries
  • 2 Tablespoons of chia seeds
  • 2 Tablespoons of virgin coconut oil
  • 2 cups of unsweetened almond milk
  • 1/4 cup of unsweetened shredded coconut
  • 8 ice cubes

Instructions

  1. Place all ingredients (except ice) in the blender.
  2. Blend on high 1-2 minutes.
  3. Add in ice cubes, blend on ‘frozen drinks’ mode or use ice crusher to blend cubes.
  4. Blend until smooth.

Notes

  • I like the subtle coconut flavor in this smoothie, but if you are craving more – use coconut milk instead of almond milk, it will taste tropical!
