Ingredients
- 1/4 cup fresh pomegranate seeds
- 1 sprig fresh rosemary
- 1 tbsp fresh lime juice
- 1 tbsp simple syrup*
- 3 dashes lemon bitters
- 2 oz vodka
- 2 oz ginger beer
- Splash of pomegranate juice, to top up
- Pomegranate seeds and rosemary sprig, for garnish
Instructions
- Muddle: In a tall glass, muddle the pomegranate seeds, rosemary sprig, lime juice, simple syrup, and lemon bitters until the pomegranate seeds release their juice and the rosemary is fragrant.
- Fill the glass halfway with ice cubes. Add vodka and ginger beer, then top with a splash of pomegranate juice.
- Stir and Garnish: Stir well to combine all the flavors. Garnish with a few pomegranate seeds and a sprig of rosemaryfor a festive touch.

Pro Tip: For an extra sparkle, rim the glass with sugar mixed with finely chopped rosemary before serving.
