Ingredients

  • 1/4 cup fresh pomegranate seeds
  • 1 sprig fresh rosemary
  • 1 tbsp fresh lime juice
  • 1 tbsp simple syrup*
  • 3 dashes lemon bitters
  • 2 oz vodka
  • 2 oz ginger beer
  • Splash of pomegranate juice, to top up
  • Pomegranate seeds and rosemary sprig, for garnish

Instructions

  1. Muddle: In a tall glass, muddle the pomegranate seeds, rosemary sprig, lime juice, simple syrup, and lemon bitters until the pomegranate seeds release their juice and the rosemary is fragrant.
  2. Fill the glass halfway with ice cubes. Add vodka and ginger beer, then top with a splash of pomegranate juice.
  3. Stir and Garnish: Stir well to combine all the flavors. Garnish with a few pomegranate seeds and a sprig of rosemaryfor a festive touch.

Notes

Pro Tip: For an extra sparkle, rim the glass with sugar mixed with finely chopped rosemary before serving.
