Thai Chicken Lettuce Wraps with Peanut Sauce
We are a peanut butter-loving family. My kids always ask for peanut butter on their toast, waffles, and apples. My husband and I enjoy it in our morning smoothies and all four of us like to eat Peanut Butter Snack Bites on the go.
Truth be told, Kraft Peanut Butter is a staple in our pantry. It is so versatile! From scrumptious baking to flavourful sauces, one jar of Kraft Peanut Butter hits home run after home run and offers endless inspiration.
I asked my husband if he wanted to join me in the kitchen to try a new recipe that involved peanut butter and he was right on board. These lightened up Thai chicken wraps use lettuce instead of rice wrappers but you still get to dip them in the delicious peanut sauce – my favourite part!
Begin by making the scrumptious sauce. In a medium bowl, combine Kraft Smooth Peanut Butter, rice wine vinegar, water, honey, soy sauce, lime juice, sesame oil, fish sauce and chili flakes. Using a fork, whisk until smooth and refrigerate while you prepare the wraps.
To prepare the wraps, first mix together in a large bowl finely chopped chicken breast, peanuts, garlic, cilantro, chives, ginger, fish sauce, lime juice, sesame oil, and chili flakes. Wash and dry around 12 leaves of Boston lettuce. Gently scoop 1-2 tablespoons of chicken mixture onto each leaf. Serve on a platter with the peanut sauce next to it, so you can drizzle a spoonful on top.

- 1/2 cup chopped peanuts, plus extra for garnish
- 1 clove of garlic, pressed through garlic press
- 1 tsp lime zest
- 1 tbsp lime juice
- 2 tbsp chives, chopped
- ½ cup fresh cilantro leaves, chopped
- 1 tablespoon virgin olive oil
- ¼ teaspoon grated fresh ginger
- ¼ teaspoon chili flakes
- ½ teaspoon sesame oil
- 1 teaspoon fish sauce
- 1 head of Boston lettuce
Peanut Sauce
- ½ cup Kraft Smooth Peanut Butter
- ¼ cup rice vinegar
- ¼ cup, plus 3 tablespoons water
- 2 tbsp soy sauce
- 2 tbsp honey
- 1½ tablespoons fresh lime juice
- 1 teaspoon sesame oil
- ½ teaspoon chili flakes
- ½ teaspoon fish sauce
- 1 tablespoon peanuts, chopped
Instructions
