The Best Gluten-Free Pear Cobbler
There is this slow transition happening in my kitchen. It’s subtle, but I sense it. I reach for potatoes to peel instead of watermelons to slice. I filled up the cinnamon and nutmeg spice jars. My vegetable drawer is stocked with zucchini. There is a hint of Fall in the air outside, and it’s seeping into our home. On an unexpectedly cool day last week, I pulled out a large casserole dish and began to fill it with ripened pears. I wasn’t too sure where I was going with this, but it felt right.
Then, I sprinkled them with cinnamon, nutmeg, and a bit of raw sugar. Just like that, they would have been nice to bake and make a pear compote of sorts – however, I decided to top them with a spiced oat mixture. It would be a heavier and richer dessert.
The cobbler is simple and easy to make. It’s comforting in its simplicity and comforting when you eat it. I like that. It’s definitely an Autumn dessert. I combined gluten-free oats, brown rice flour, raw sugar, eggs, spices, and virgin coconut oil – it smells so good and it hasn’t even hit the oven yet. Piled over the warm pears, covered and into the heat for baking it goes. You hardly need a timer to know when it’s ready –
the incredible aroma will alert you, along with everyone else in the house, that something tasty is done.

Mmmmm….I love cobbler! This sounds fantastic!! You’re making me excited for fall!! Pinning now 🙂
Thanks Amee, I’m getting excited for Fall too. At first I wasn’t quite ready, but the more pregnant I get, the more I’m ready for cooler weather and baby’s arrival!
Assuming you add in the oats with the other dry ingredients? It’s not in the directions. Thanks
Yes! The oats go with the dry ingredients. (thanks for letting me know, I’ve updated the recipe card)
